The OM's role is broad, often bridging the gap between high-level strategy and daily execution.
Process Optimization: Identifying bottlenecks in the workflow and implementing "lean" methodologies to make things faster and cheaper without losing quality.
Supply Chain & Logistics: Managing relationships with vendors, overseeing inventory levels, and ensuring the "stuff" gets to where it needs to be on time.
Financial Oversight: Developing and managing budgets. They are often responsible for the Bottom Lineโfinding ways to reduce overhead and increase profit margins.
Team Leadership: Hiring, training, and supervising department heads. They ensure the company culture is actually lived out on the floor, not just written in a manual.
Compliance & Risk: Ensuring the business stays on the right side of legal, safety, and industry regulations.
The day-to-day usually follows a strict schedule to ensure products are fresh for opening hours.
Mixing & Preparation: Measuring and scaling ingredients accurately. Operating industrial mixers to develop dough or batter consistency.
Dough Handling: Scaling, dividing, shaping, and molding dough (by hand or using machinery) for various products like sourdough, baguettes, or rolls.
Proofing & Baking: Monitoring proofing cabinets to ensure dough rises correctly and managing oven temperatures/timers to achieve the perfect bake.
Finishing & Decorating: Applying glazes, washes, or simple toppings (like seeds or sugar) post-bake.
Quality Control: Rejecting products that don't meet size, color, or texture standards.
Sanitation: Maintaining a "clean as you go" workflow. Scrubbing stations, sanitizing tools, and ensuring compliance with health and safety codes.
